Production process: Kosho wine has the peculiarity of being produced through a premature harvest of grapes. The premature harvest gives the wine a particular freshness, leaving an almost fruity taste in the mouth of the taster.
The vines used for the creation of Kosho, sushi wine, are cultivated near the coast. Soils close to the coast often contain unique minerals that can be absorbed by vine roots.
This can give the wine a characteristic sapidity or minerality, particularly appreciated in white wines. Just the place where these vines belong is a fundamental thing because the grapes staying close to the coast and having to deal with the sea winds and the brackish air, will develop distinctive aromas, such as mineral and saline notes. Then the grapes, once harvested, will give the wine a hint of flavor that will give exclusivity, taste but above all a certain minerality and a distinctive freshness to the wine. These aromas can add complexity and uniqueness to the aromatic profile of the wine.
For this reason, it is a white wine that is particularly alongside the dishes of oriental cuisine and umami foods. It’s an exclusive and original wine made especially for sushi. For this reason our Kosho wine is called ‘sushi wine’.
