Holy Mass wine is a liqueur wine prepared according to canon law with the least intervention. It’s a blend of grapes, rectified must and alkool from vinous matter. It contains few sulfites to respect the criterion of the “minimum intervention” imposed by canon law but, being a sweet wine, must be added rectified must (cane sugar is not allowed) and then alcohol from vinous materials so that the product has a long life (alcohol from molasses or other non-vinous sources is not allowed).
It’s a wine that can last many years even open thanks to the fortification process. This process involves the payment of excise duties and special licences issued by customs. Traditionally, this wine is made in Marsala because they use the same licenses needed to make Marsala wine. For this reason all the Mass wine, marketed in Italy, is made in Marsala (from Marsalisti) and is monitored by the curia of Mazara del Vallo which is specialized in this aspect. The capital of the province of Marsala is trapani, but according to the organization of the curia, the organizational center of western Sicily is Mazara and the monitoring centers are there (you can see the logo of the curia of mazara in the back of the bottle).
Holy mass wine is not aged in wood.
